Apple Cinnamon Oat Muffins
Because apples and cinnamon are the dream team, and these muffins are delicious. I was so pleased to try some of Home Hardware’s Mosaic Bakeware and Cookware Collection to make these muffins. Their mixing bowl and muffin tin were perfect, and I can’t wait to bake more of my favourite fall recipes.
Here's what you need:
Recipe:
1 1/4 cup flour
1 cup rolled oats
3/4 cup sugar
1/4 cup brown sugar
2 tsp baking soda
1/2 tsp salt
1 tbsp cinnamon
1 additional tsp cinnamon + 1 tbsp sugar for the apples
2 apples
1 tbsp vanilla extract
1/2 cup vegan butter, room temperature
1/2 cup unsweetened applesauce
1/2 cup plant based milk
Directions:
Peel and dice the apples into small cubes and add in 1 tsp cinnamon + 1 tbsp sugar and coat the apples
Combine the rest of the ingredients in a bowl using a hand mixer, then fold in the apples.
Scoop the batter into a lined muffin tin, then bake at 350° for 30-35 minutes, depending on your oven. They are done when you poke them with a toothpick and it comes out clean.
Wait until they are completely cool before eating, and enjoy!
Pumpkin Chocolate Chip Cookies
Recipe:
2 3/4 cups flour
1 tsp baking powder
1 tsp baking soda
1 cup brown sugar
1/2 cup white sugar
1/2 tsp salt
1 tsp pumpkin spice
1 tsp cinnamon
1/2 tsp nutmeg
1 1/3 cups pumpkin purée
2 tsp vanilla extract
1/4 cup apple sauce
1/2 cup vegan butter, room temperature
Directions:
Combine all the ingredients except the chocolate chips using a hand mixer, then fold in the chocolate chips. Refrigerate the cookie dough for 2-3 hours and then roll into balls and place on a cookie sheet.
Bake at 350° for 15 mins, and allow the cookies to cool for 10-15 minutes before touching them, then enjoy!
